If you’re thinking of ways to sneak in more veggies onto your family table (and no one is allergic to peanuts!), look no further than this peanut, red cabbage, and carrots salad.
Much like any salad, this one can offer a variety of combinations, based on your preferences, season availability, and so on. The dressing is equally smooth, rich, and healthy whichever veggies you decide to mix it with.
I would like to emphasize though, that it’s best to stick with root and cruciferous vegetables, as they don’t lose the form when seasoned, on the contrary; they stay crunchy which is one of the main delights of this rich peanut, red cabbage, and carrot salad. Besides, I am sure you could always do with another portion of kale, red cabbage, or celery.
When it comes to preparation, it truly takes a little time. Some dressings need to be mixed earlier for flavors to blend and oose perfectly, but not this one. So, when you decide you’re up for a quick and satisfying salad meal, it a matter of chop and blend 🙂

Speaking of chopping, feel free to use a chopper for your veggies. I didn’t as I like the cabbage to be sliced into bigger chunks, and the carrot to be shredded with a fork and a peeler. How do I do it? Peel your carrot, stick a fork at the top of it, and use a veggie peeler to create thin curvy slices. My peeler has a few cogs, which makes the shredding even more appealing to the eye.
How to make the perfect dressing
There are several versions but I will keep it short and propose two. It’s a matter of taste and simplicity: you can go basic (you won’t be losing on the flavors and richness, I promise!) and mix peanuts with peanut butter, some salt, lemon juice and olive oil. Et voila, you got yourslf a fantastic, creamy topping for the fresh veggie mix.
The other option suggest adding a piece of fresh ginger, some soy sauce, Tamarind paste and a hint of chilly pepper into the mix. This is for more exotic flavor lovers (where I definitely belong), but again, you can go with just one of two of the additional ingredients from this list. The choice is yours – the important thing is, the salad will be stunning any which way you choose.
Keep your superfood super-tasty red cabbage & peanut salad in the fridge for a couple of days. It won’t get saggy 😉 You can always refresh it with a few drops of lemon juice after a few days of sitting.

Super-quick superfood peanut & red cabbage salad

1/4 of a red cabbage
2 big carrots
Sprouts of choice, optional
- For the dressing
150 g of unsalted roasted peanuts, grinded in a chopper or blender
2 tbps of peanut butter
Juice of 1/2 lemon
2 tbsps olive or other oil
1 tbsp soy sauce, optional
1 tsp Tamarind paste, optional
1 small piece of freshly grated ginger
1/2 teaspoon of chilly pepper flakes
Directions
- Grate or chop the veggies in a large salad bowl.
- Mix all the dressing ingredients in a separate dish; try out different ingredient ratios to prepare the sauce more greasy, creamy, chilly or lemony.
- Pour the dressing over the salad and enjoy!
