Simple and tasty broccoli parmesan sticks (with vegan option)

Made both for those who love and hate broccoli, this quick snack or entree will bring a smile to your face. Why? Because it is healthy, easy to make and family-friendly. In fact, this is one of those recipes recommended for parents struggling with non-veggie eating kids. Broccoli parmesan sticks are equally as tasty in the vegan version – with nutritional yeast of vegan parmesan if you have it. 

This is one of those dishes – snacks, whatever 🙂 – that is a perfect choice when you have some broccoli lying around which is about to go bad. Thanks to the mix of fantastic Provencal spices such as marjoram, thyme and estragon and cheese, these broccoli parmesan sticks are a great, aromatic companion to a glass of white wine.

Originally vegetarian, broccoli parmesan sticks can easily be made as a vegan delight, too. Instead of eggs, I am using flax eggs, so the only ingredients you need to switch is the cheese. Replace it with nutritional yeast or a vegan parmesan, if you can.

This healthy snack is simple to make, yet count on approximately 15 mins of “resting time” before the baking. Now, let’s start the preparation!

Check out this amazing, simple and indulging appetizer, perfect to make for both broccoli lovers and haters. Originally vegetarian, broccoli parmesan sticks can easily be made vegan.

Ingredients

  • 1 small broccoli

  • 2 flax eggs 

  • 3 tbsp grated parmesan (or other hard cheese) or nutritional yeast

  • 1 tbsp sesame seeds

  • Mixed Provencal spices (thyme, basil, marjoram, estragon…)

  • Salt 

  • 1 tbsp olive oil

Directions

  • Prepare the flax eggs by mixing 1 tablespoon of ground flaxseed with 2 tablespoons of water. Mix together, and let sit in your fridge for 15 minutes.
  • In the meantime, wash the broccoli and remove the leaves and stems. Pulse it in a chopper or blender to get a granulated mixture. 
  • Add all the ingredients into the broccoli, stir well and transfer onto the baking tray lined with baking paper.
  • Bake at 180C until you get a golden brown crust, for around 30 mins.
