Green Bliss: Green pea and avocado salad with mozzarella

This no-hassle super-tasty salad can be a perfect dinner, as it bursts with essential nutrients. Serve it with a healthy piece of bread or cracker for a full evening indulgence.

Ingredients

  • 2 big cups of fresh (baby) spinach

  • 2 big avocados

  • 100 g green pea

  • Few leaves of chard

  • 200 g mozarella balls

  • A handful of arugula

  • 2 spring onions, optional

  • Juice of 1 lemon

  • 100 g black olives

  • Olive oil and salt

Directions

  • Wash the spinach, chard and arugula. Chop the spring onion into small bits.
  • Peel and dice the avocado and add it to the spinach, arugula and onion.
  • Cook the sweet peas in boiling water for about 5 mins. Rinse them immediately with cold water, rinse and transfer to the salad.
  • Add basil leaves, mozarella, and black olives.
  • Drizzle with olive oil, juice lemon and season with salt. Mix thoroughly and serve immedately.
