Calling all calzone lovers! This recipe for calzone made of spelt flour is packed with nutrients and flavours.
Spelt flour is a true discovery for me. As opposed to the regular white flour, it is a far healthier choice, yet it has a lovely, almost sweet taste and it is very simple to use for baking.

This leek and mushroom calzone is enriched with yellow, easily melting cheese. You can skip it, or replace it with cream cheese, mozzarella or other kind you prefer. You can change the filling all together; spinach & feta or olive and tomato would be a great choice, too.
Leek & mushroom calzone with spelt flour

350 g spelt flour
1 baking powder
200 g sour cream or Greek yoghurt
100 ml olive oil
1 tsp salt
- For the filling
300 g mushrooms
1 leek
Salt and pepper
Dried basil and oregano
Around 50 g of yellow cheese
Directions
- Mix all the ingredients to prepare the dough, and leave it to rest for about 20 mins.
- In the meantime, make the filling: saute the leek and mushrooms until completely soft and cooked. Season with salt and pepper. Add the dried oregano and basil, and stir well.
- Preheat the oven to 200 C.
- Use a rolling pin to flatten the dough until you get the desired thickness. To prepare a calzone, use a glass to cut circles. Fill the circles with the filling and top with a cube of the cheese.
- Fold the calzone and use a fork to press the two edges.
- Bake the calzone for about 25 mins at 200 C, or until golden. Enjoy!
