Lentils and walnuts and red onion and figs and mustard dressing? Oh yes, this one is a true discovery!
If you or your family are not a big fan of green lentils – yet you’re looking for a way to incorporate more of this incredibly healthy food into your diet, fear not! This green lentils salad with walnuts and dried figs is here to change your mind. And it does very successfully. Originally, I got the recipe from my mother in law. I loved the salad, but I also saw the potential to enrich it. So I did, dramatically.
The recipe I got contained green lentils, red onions, salt & pepper, olive oil, and lemon juice. It was surprising how simple and tasty it was. But with time, I realized that celery sticks could go great with the above-mentioned ingredients. So would red onions. That reminded me: my friend once brought a lettuce based salad with red onions, raisins, and honey-mustard dressing. It was delicious! Instead of raisins, I’ve added dried figs, but also walnuts, arugula, and corn salad. Now we have a completely different dish. One that pleases even my husband, a green lentil hater.
This green lentil salad is very filling and makes for a perfect dinner. If you’re eating cheese, feel free to serve it with a piece of camembert. Bon appetite!
Aromatic vegan lentil salad with walnuts and dried figs

150 g green lentils
50 g walnuts
1/2 red onion
A handful of dried figs, chopped
1 celery stick
A handful of arugula
Handful of corn salad
Salt and pepper
- For the dressing
Juice of 1/2 big lemon
1-2 tbsps Dijon mustard
1 tbsp sweetener, maple syrup or agave
1 tbsp vegetable oil (linseed or olive)
Directions
- Cook the green lentils until tender, for approx 20 mins. Let them cool.
- In the meantime, cut the onion and celery and coarsely cut the walnuts. Dice the figs.
- Once the lentils cool, combine all the salad ingredients in a big bowl.
- Mix the ingredients for the dressing. Pour it over the salad, mix thoroughly and serve.
