Spread like this one is true vegan gold. It is based on sunflower seeds – a treasury of vitamins and minerals, to which you will be adding mushrooms of your choice. I’ve used champignons, which blend perfectly with different herbs, such as basil.
Store the spread in an airtight food container for up to one week. Enjoy it with healthy crackers or inside of a rich and healthy sandwich.
Creamy vegan and sunflower mushroom spread

Ingredients
100 g raw sunflower seeds
150 g mushrooms
1 spring onion
A handful of fresh basil
2 tbsp of olive oil
Salt and pepper
Directions
- Roast the sunflower seeds in to a non-stick pan for a few minutes, until they become golden brown and start releasing the nutty aroma.
- Transfer into a blender or a chopper.
- Sautee the onion and mushrooms until they release the juices. Season with salt and pepper.
- Add the mushrooms to the sunflower and pulse until you get a creamy consistency. Add a tablespoon of olive oil if needed and blend some more.
