Super easy homemade mushroom spread

No need to buy a mushroom spread which is probably packed with salts and preservatives. Make your own by following this simple recipe. The result is creamy and rich in flavors!

Spread like this one is true vegan gold. It is based on sunflower seeds – a treasury of vitamins and minerals, to which you will be adding mushrooms of your choice. I’ve used champignons, which blend perfectly with different herbs, such as basil.

Store the spread in an airtight food container for up to one week. Enjoy it with healthy crackers or inside of a rich and healthy sandwich.

Making a nutritious spread like this can’t be easier, yet the taste is great. Use any mushrooms you prefer and experiment with spices.

Ingredients

  • 100 g raw sunflower seeds

  • 150 g mushrooms

  • 1 spring onion

  • A handful of fresh basil

  • 2 tbsp of olive oil

  • Salt and pepper

Directions

  • Roast the sunflower seeds in to a non-stick pan for a few minutes, until they become golden brown and start releasing the nutty aroma.
  • Transfer into a blender or a chopper.
  • Sautee the onion and mushrooms until they release the juices. Season with salt and pepper.
  • Add the mushrooms to the sunflower and pulse until you get a creamy consistency. Add a tablespoon of olive oil if needed and blend some more.
