minutesIf we disregard the 30 mins of cashew soaking, this recipe requires 15 or fewer minutes of your time. The taste is both creamy, due to cashews and coconut butter and refreshing, due to the lemon juice.
Ingredients
100 gr raw cashews
100 gr coconut butter
Tablespoon of lemon juice
Desiccated coconut
A teaspoon of coconut oil
Maple syrup or a sweetener of your choice
Directions
- Soak the cashews in warm water for around 30 mins. Rinse and drain.
- Transfer the cashews into a food processor or a chopper. Add the remaining ingredients except for the desiccated coconut, and pulse until you get a smooth mixture.
- Form small balls and roll them into the coconut flakes.
- Let it rest in the fridge or freezer, for at least half an hour. Enjoy!
