Of course, you can play with the main ingredients of this vegan fudge and try other fruits and nuts. However, this combination promises true indulgence and perfectly balanced sweetness, creaminess, and crunchiness.

The best way to shape the fudge is to pour it into the silicon ice maker. It would be easier to remove them once frozen. Depending on the size of the individual mold, the below-listed amount should be enough for 12 very large or up to 20 smaller pieces.

The only tricky part when it comes to this dessert is to learn its defrosting time scheme. What I mean by this is not to leave it outside of the freezer to thaw for too long before consumption. Optimal time would be between 10 and 20 mins, depending on the room temperature. After that, the strawberry pistachio fudge starts to melt and lose shape.

As far as the storage goes, it should be kept in the freezer, not in the fridge. You can defrost it and freeze again a couple of times – if, by some miracle, the fudge survives as long.

Do you love strawberries? What about pistachio? Well, mixing them with coconut butter creates true magic that will impress your family and guests. This vegan fudge takes literally 15 minutes to prepare, so there is really no excuse not to try it next time you decide to treat yourself.

Ingredients

  • 150 gr coconut butter

  • 1 overripe banana

  • Handful of strawberries

  • Handful of unsalted pistachios

  • One tablespoon of a sweetener – agave or maple sirup* 

  • Teaspoon of coconut oil

  • A pinch of salt (I used salt with rose petals :)) 

Directions

  • Prior to making the fudge, make sure all the ingredients are at the room temperature.
  • Put the butter, oil, banana, salt and sweetener into a chopper or food processor. Pulse until smooth.
  • Chop the strawberries and pistachios in small pieces.
  • Carefully stir them into the mixture and pour the mixture into molding shapes. Let it freeze for at least one hour.

Notes

  • *You can add more or completely leave the sweetener out, depending on the level of sweetness you want to achieve. Make sure to try the fudge and decide before freezing it.
