Flavorful black bean rainbow salad (vegan)

It’s not really important if you’re a vegan or not. A nourishing and flavourful salad like this one, starring black beans, will be extremely healthy and tasty for the whole family.

The recipe contains several ingredients you can usually buy canned. Well, the idea is to avoid the canned option and go with home-cooked. Beans have a reputation for being boring to prepare. As though this may be true, for me this is just an excuse. Why? Because you can always find 1 minute to soak them into the water and forget about them until the next day. Then your only task is to rinse the beans and transfer into a pot. Again, forget about them until they are fully cooked, let them cool and freeze the amount you won’t be needing now.

With time, I’ve stopped buying canned beans, chickpeas, and lentils simply because I don’t want unnecessary salt, sugar, or preservatives intake. I’ve simply developed a habit of always storing cooked beans in the freezer. This is a far healthier option and it’s no hassle.

Vegan black bean salad is full of all necessary micro and macronutrients, which makes it a great choice for dinner. Serve it with homemade crackers such as these ones made from spelt flour.

This salad is as appealing to the eye as it is appetizing for your taste buds. Apart from being simple to make, flavourful black bean rainbow salad can be frozen, stored in the fridge for days, and used as a whole meal or a side dish.

Ingredients

  • 150 gr of black beans, cooked

  • 100 gr of sweet corn, cooked

  • 1 large avocado, peeled and diced

  • 1 fresh red capsicum, diced

  • Handful of fresh spinach or chard

  • ½ of purple onion

  • 1 fresh carrot, grated

  • 1 fresh tomato, diced

  • Fresh parsley or coriander

  • Salt and pepper

  • Olive oil

  • 1 tbsp lemon juice

  • 1 tsp coriander seeds, grounded

Directions

  • In a large salad bowl, mix the black beans with corn and all the veggies.
  • Add salt, pepper, parsley and coriander seeds.
  • Drizzle with olive oil and lemon juice and mix thoroughly.
