Oven-baked chickpea patties (vegan and gluten-free)

You would be surprised how easy it is to make this delicious food, which is extremely healthy and satisfying, even for non-vegans. In this recipe, I’ve used carrots and spring onions, but it’s really up to you to choose your favorite veggies and spices to mix your perfect chickpea patty. Don’t fry them: the oven will do a perfect job and you have saved yourself from massive oil intake. 

The great thing about these patties is how creative you can be – not just with the veggies, but with the spices, too. You can make them hot if you like, in that case, my proposal would be to serve them with a refreshing dip or salad like cucumber raita with mint.

These vegan chickpea patties are a great appetizer to serve for lunch or dinner, preferably prior to a rich meal like buttery and spicy paneer – cheese in a cashew and tomato cream.

This super-tasty appetizer is also super-easy to make, gluten-free, and rich in aromas. Experiment with veggies and spices you like!

Ingredients

  • 1 fresh carrot, peeled and grated

  • 1 fresh chard leaf, chopped

  • 1 spring onion, finely chopped

  • 150 gr chickpea flour

  • Salt and pepper

  • 1 tsp garam masala

  • ½  tsp turmeric

  • ½ tsp cinnamon

  • Splash of water, if needed

  • Around 2 tbsp of olive oil

Directions

  • Preheat your oven to 200C.
  • Mix all the ingredients thoroughly and taste to see whether you’re happy with the seasoning. The patties mixture should be firm enough for you to form little burgers with your hand. If the mixture is liquid, add a bit more chickpea flour and vice versa. If it is too thick, splash it with a bit of water to get the right consistency.

  • Bake for approx 20-25 mins in total, flipping them halfway if it’s necessary. The patties are ready once you get the golden crust.
  • Serve with refreshing cucumber raita salad.
