Creamy baked zucchini & basil dip

When it’s time for a tasty snack – say, some homemade crackers and aromatic dips – you should always have a quick and simple recipe up your sleeve. This is just the kind. Creamy baked zucchini and basil dip consists of just a few ingredients (20% of them being in the recipe title), yet the taste is rich and appetizing.

The making process is very easy. The notoriously watery zucchini (or summer squash, whichever you have or like) is baked with the fresh basil and blended with yogurt and cheese. If you don’t have fresh basil, feel free to sub with dried one. Also, don’t hesitate to further enrich the dip by adding oregano, garlic or chives if you like. All of these flavors will blend perfectly and give the dip a spicy kick.

The measurements you will find in the recipe below are approximate. Adjust the amount of feta cheese and yogurt to achieve more thick or liquid consistency.

Whenever you feel like pairing your homemade crackers with a tasty dip, chose this simple 5 ingredient recipe with a taste of the Mediterranean.

Ingredients

  • 1 large zucchini

  • A handful of fresh basil

  • Feta cheese, around 100 g

  • 2 tbsp Greek yogurt, more if needed

  • 3 tbsp olive oil

  • Salt and pepper

Directions

  • Preheat the oven to 200 C.
  • Cut the zucchini into cubes and spread them on a piece of parchment paper. Sprinkle with salt and pepper and half of the fresh basil. Drizzle with olive oil and place into the oven.
  • Bake for about 25 mins, or until you see the zucchini is forming a crust and losing water.
  • Transfer into a chopper or blender. Add cheese, yogurt, and remaining basil and pulse until you get a creamy consistency.
  • Adjust the amount of feta and yogurt to achieve the desired texture. Enjoy with homemade quinoa crackers.
